This delicious and quickly prepared dish is one of the favorites of our colleague and habicook for the occasion, Ben.
Ingredients
• 2 salmon fillets of +/- 150 gr
• 3 cl mustard
• Olive oil
• 3 cl honey
• ½ bunch of fresh dill or 2 teaspoons of dried dill
• Salt & pepper
• Cherry tomatoes
• Potatoes
• Spring onion
• Sweet onion
• Chives
• Olives (green or black)
• Balsamic vinegar
Preheat the oven to 200 degrees. Grease an oven dish with olive oil and place the salmon in it. Then mix the mustard and honey, along with the fresh dill, in a separate bowl and season well with salt and pepper. Spread this over the salmon and bake for 12 to 15 minutes in the preheated oven until the salmon is lightly pink inside.
Peel the potatoes and cook them for about 20 minutes in a pot of water. Meanwhile, finely chop the spring onions and sweet onions into small pieces. Also mix in a tablespoon of honey. Mash the potatoes with a fork and mix in the spring onions and sweet onions with honey.
Then take an ovenproof dish and place the cherry tomatoes and olives in it. Drizzle with olive oil and balsamic vinegar until about 1/3 of the dish is covered. Then bake this for 25 minutes in a preheated oven at 180 degrees.
