This delicious oven dish is a real recommendation to prepare when family or friends come over for dinner. You can prepare almost everything in advance, then bake it in the oven and enjoy this Mediterranean dish with a nice glass of wine.

PREPARATION:
Step 1: Wash the potatoes with the skin on. Cut large ones into 2 or 4 so that all pieces are roughly the same size. Boil the potatoes in their skin in salted water for about fifteen minutes.
Step 2: Vegetables & herbs...
- Peel and finely chop the shallots
- Wash and dice the zucchini (with skin), vine tomatoes, and bell peppers into 1 to 2 cm cubes. Be sure to remove the seeds and membranes from the bell peppers.
- Crush and peel the garlic. Chop the cloves and crush them with a knife.
- Use a handful of basil to give the dish a delicious flavor. Rinse the basil and let it drain on paper, then finely chop the leaves.
Step 3: Take a large baking dish and arrange the pre-cooked potatoes, vegetables, garlic, basil, thyme, rosemary, and bay leaf.
Step 4: Arrange the cod fillets among the vegetable mixture so they can fully absorb the Mediterranean flavors of the vegetables and herbs while cooking in the oven.
Step 5: Drizzle the whole dish generously with olive oil. Make sure the cod fillets are completely covered. Then pour half a bottle of dry white wine over the dish and sprinkle generously with Fleur de sel and a few good twists of the pepper mill.
Step 6: Preheat the oven to 200°C and bake the dish for 30 minutes. Check the doneness of the cod after 30 minutes by poking it with a fork.
Step 7: Serve on plates and arrange the vegetables around the cod. Use some fresh basil leaves for garnish.
